  1. Prepare of Jamaican white over proof rum.
  2. Prepare of port wine or red label wine.
  3. You need of raisins.
  4. You need of currants.
  5. You need of dates.
  6. Prepare of dried prunes.
  7. You need of maraschino cherries.
  8. It's of chopped almonds.
  9. You need of orange juice.
  10. It's of grated zest from one lime.
  11. Prepare of dark molasses.
  12. Prepare of browning.

  14. You need of vanilla extract.

  16. Prepare of eggs.

Jamaican Christmas Cake instructions

  1. Preheat oven to 350 degree then grease and flour 2 round baking pans or which size pan u choose..
  2. In a blender add rum, wine, dates, raisins,cherries with their liquid, prunes, currants, chopped almond, orange juice and blend until all the fruits are chopped. Let sit for 1hr (2days is way better 😀).
  3. In a large bowl cream sugar and butter. Then add eggs mix well.
  4. Add molasses, browning, blended fruit mixture, lime juice, vanilla, almond extract and stir.
  5. Add flour, nutmeg, cloves, all spice, baking powder, cinnamon, salt, lime zest and stir. Do not over mix.
  6. Pour the batter into your baking pans and bake for 1hr. You can put some cherries in the center of the batter if you wish. Stick a toothpick in the middle to ensure it's done. Tooth pick will come out clean if it's done. Enjoy!.
